Getting really bored with my recipe repertoire....what are everyone's favourite quick protien or fibre rich easy meals? Hoping for you to all tantalise my taste buds!

Oh I so hear you – if I have to look at another boiled egg I might scream 😂
A few go-tos in our house, off the top of my head:

Chickpea + tuna salad – tin of each, bit of red onion, cucumber, olive oil and lemon. Takes 5 mins.

Turkey mince stir fry – I chuck it in with frozen stir fry veg and a splash of soy. Serve with brown rice or quinoa if I’ve got time.

Cottage cheese + berries for a sweet snack. Protein-packed and keeps me going.

Now that its bbq season - well for a bit - it's easy to do chciken with a rub - like piri piri or tandoori. Really nice and very filling. Also if you fancy spag bog or a recipe that needs any mince - use turkey thigh mince instead. Really good for protein and way healthier than beef.

I hear you! An AirFryer is a good investment. Can do anything in them quick so season some chicken thighs chuck in, done in 20 mins. Pair with microwave lentil pouch and frozen broccoli.

In the morning I love Protein Pancakes– oats, egg, protein powder, bit of milk. Blitz and fry OR Greek yoghurt + handful of mixed seeds + a spoon of peanut butter a nd is weirdly filling.

Lately I’ve been loving:

Baked oats:

mix oats, egg, banana, protein powder, bake in a ramekin. It’s like cake (!!) but fuels you.

Lentil dahl – 

one pot, spices, tinned tomatoes, coconut milk if you’re fancy. Freeze in batches.

Tofu scramble:

sauté with spinach, onion, and turmeric. (Much better than it sounds).

I don't get bored of these easy snacks:

Egg muffins – whisk eggs, chuck in chopped peppers, cheese, ham, bake in deep muffin tin. Grab-n-go protein.

Sardines on toast – don’t knock it till you try it (I've always loved them) ... high protein, high omega 3, ...and cheap

Sardines on toast - yuk! Hard agree on eggs tho. Love scrambled and smoked salmon as a breakfast treat. I know you prabably have to have loads of em but prawns are great in a stir fry - I use brown rice to get some fibre too. Does anyone have other fish tips?

My current go-to: tin mackerel + microwave sweet potato + handful of rocket = weirdly delicious and mega filling 💪

Also: frozen edamame w/ soy + sesame oil – snacky but packed w/ protein & fibre.

Microwaved eggs + frozen spinach + hot sauce = lifesaver 🥵💚
Also big fan of Greek yog + chia for brekkie.

When in doubt: wrap it 😅
Grilled chicken + hummus + spinach in a wholewheat wrap = done.
Also rate lentil soup w/ a poached egg on top. Strange but works!

This Chicken & Chorizo Jambalaya is a fave in our house. Easy to make, amp up the spice with chilli (fresh or powder) if you like heat (we do!)....basic ingredients....and if you make enough it will do a few meals: https://www.bbcgoodfood.com/recipes/chicken-chorizo-jambalaya

Same style as @Julia1976....vegetarian enchilladas.

Oil

2 Onions

4/5 large carrots

chilli (as much / little as you like)

2 cans copped tomatoes

2 cans of beans or pulses (any like kidney beans, chick peas, canneloni, lentils - ANYTHING)

about 200ml natural yoghurt

50g mature cheddar grated

Wholemeal tortillas (small so when rolled fit into an oven proof dish)

 

Fry onions and carrot for 5-7mins, add chilli

fry for 2 mins more

Add cans of tomatoes and beans/pulses

Let simmer for 5-10 mins then..

Put the grill on!

Get an oven proof dish and put a couple of spoonfuls of the sauce in the over proof dish and spread over the bottom of dish..

Then add a couple of spoonfulls in tortilla and wrap/roll and place in dish ontop of the sauce you laid

Carry on with remainder of tortillas

When you have rolled all your tortillas and put them in the oven proof dish

pour over yoghurt and then cheese....and any sauce if you have any left

Grill.....and bingo! 

Serve with a salad!
